Prepare the salmon up to step 1. Prepare the potato bake, leaving out the baking part.

The day before

Make the chicken curry. Make the plum tart – reheat on the day to serve it warm. Bake the chocolate torte and prepare the ganache.

On the day

Leave out the cocktail ingredient­s so you can shake them up at a moment’s notice. Slice the salmon a few hours before serving the starter. Heat up the lamb and chicken about an hour before serving. Bake the potato bake. Cook your greens last-minute. Take the ganache out of the fridge an hour before icing the cake. Make the honeycomb and set aside to decorate the cake about an hour before serving.
