Warming and healthy winter dishes to use up and transform Christmas leftovers into hearty meals
Oven-baked Boxing Day risotto
Simply leave in the oven to do its thing. Serves 4 • Ready in 45mins
150g diced pancetta or leftover ham 2tbsp olive oil
1 onion, chopped
500g leeks, sliced and washed 2 garlic cloves, crushed 300g risotto rice
2 chicken stock pots
125g kale or chard
60g Parmesan cheese, grated 1 Heat the oven to 200C/Gas Mark 6. Dry-fry the pancetta in a flameproof casserole for a few mins, until crispy. Set aside.
2 Add the oil to the casserole; gently fry the onion and leeks for 10mins. Stir in the garlic, rice, stock pots, pancetta and 1 litre boiling water. Season and cover.
3 Cook in the oven for 30mins. Add the kale and return to the oven for a further 5mins. Stir in the cheese and serve. Per serving: Cals 593, Fat 24g,
