Celebration prawn platter
Light and refreshing – for vegetarians, serve the salad mix with some mushroom pâté or goat’s cheese on toast.
✱✱540g can grapefruit segments in juice, drained
✱✱2 avocados, peeled, quartered and sliced
✱✱200g radishes, quartered
✱✱75g pomegranate seeds
✱✱500g marinated king prawns
✱✱Juice of ½ lemon
✱✱a few flat-leaf parsley sprigs
arrange the grapefruit segments on a serving plate. Top with the avocado slices, radishes and pomegranate seeds.
Pile the prawns in the centre, drizzle over the lemon juice and scatter with a few parsley sprigs.
