Green beans with Peppadew salsa

✱✱1 red onion, finely chopped

✱✱3 tomatoes, finely chopped

✱✱16 mild Peppadew peppers from a jar, finely chopped

✱✱4tbsp olive oil

✱✱3tbsp balsamic vinegar

✱✱2 x 400g packs green beans, trimmed

1 mix together the onion, tomatoes, peppers, olive oil and balsamic vinegar and season with salt and freshly ground pepper. You can make and chill the salsa the day before if you want to get ahead.

2 cook the green beans in a pan of boiling water for 4-5 mins until just tender. Drain and serve with the salsa. Per serving: 135 cals, 9g fat (2g saturated), 8g carbohydra­tes
