Serve with salad. ✱ chicken and beetroot sandwich Fill 2 medium slices of wholemeal bread (from a small 400g loaf) with cooked skinless and boneless chicken breast slices, sliced pickled beetroot, sliced cucumber, sliced tomato and lettuce leaves. ✱ Picky Ploughman’s Pile up a plate with 3 mini Babybel Light cheeses (from your allowance), pickled onions, cornichons, cooked beetroot, salad leaves, apple wedges and cold cuts of cooked beef or turkey (visible fat removed). ✱ tuna niçoise Toss salad leaves with cherry tomatoes, quartered hard-boiled egg, diced cucumber, drained canned baby potatoes in water and drained canned tuna in spring water.
