Tuscan bean and pasta soup with a flavour boost from pesto, this is a hearty meal in a bowl

Serves 4 Prep 10 mins Cook 20 mins

✱✱1 onion, chopped ✱✱2 carrots, chopped ✱✱2 celery sticks, chopped ✱✱2tbsp olive oil ✱✱2 garlic cloves, chopped ✱✱a pinch of dried chilli flakes ✱✱4 small sprigs rosemary ✱✱400g can chopped tomatoes

✱✱850ml hot vegetable stock ✱✱400g can borlotti beans, drained ✱✱60g small pasta shapes ✱✱4tsp pesto

1 put the onion, carrot and celery in a large pan with the oil. cook over gentle heat for 5 mins then add the garlic, chilli flakes and rosemary. cook for 5 mins, stirring occasional­ly until softened.

2 add the tomatoes and vegetable stock and bring to the boil. add the borlotti beans and pasta shapes and simmer for 10 mins until the vegetables and pasta are tender.

3 season with salt and freshly ground black pepper, ladle into bowls and serve with 1tsp of pesto dolloped on top of each one.

Per serving: 237 cals, 9g fat (1g saturated), 29g carbohydra­tes
