Car­rot and red len­til soup

Fry 1 small onion and 250g car­rot (chopped) in 1tbsp olive oil. add 1 litre of veg­etable stock af­ter 5 mins. add 125g red lentils and sim­mer for 25 mins. Blend and serve with chilli flakes and fresh co­rian­der.
