Carrot and red lentil soup
Serves: 4 calories per Serving: 149
Fry 1 small onion and 250g carrot (chopped) in 1tbsp olive oil. add 1 litre of vegetable stock after 5 mins. add 125g red lentils and simmer for 25 mins. Blend and serve with chilli flakes and fresh coriander.
