Spicy minced pork lettuce cups

1 Place a non-stick frying pan on to a medium heat. add 1tbsp toasted sesame seed oil, 2 minced garlic cloves, a small piece of grated ginger, 1-2 sliced red chillies and 1 small, sliced red onion. gently fry for 3-4 mins.

2 add 500g of minced pork (5% fat), 2 sliced red peppers and 2 peeled and chopped carrots. Break down the mince with a wooden spoon and place a lid on the pan. Leave to cook for 5-10 mins so the veg has a chance to soften.

3 now add 1tbsp honey, 1tbsp fish sauce, 2tbsp soy sauce and some lime juice and mix well. cook for a further 2-3 mins until the mince is completely cooked through, the vegetables are soft and the sauce has reduced.

4 Wash 1 Little gem lettuce, chop off the ends and separate out the leaves into 4 cups. chop 2 spring onions.

5 Finally, stir in 25g of peanuts and a handful of mint and coriander into the pork mixture. Fill each lettuce leaf with a spoon of mince and sprinkle with some spring onions to serve.
