Spicy minced pork let­tuce cups

1 Place a non-stick fry­ing pan on to a medium heat. add 1tbsp toasted sesame seed oil, 2 minced gar­lic cloves, a small piece of grated gin­ger, 1-2 sliced red chill­ies and 1 small, sliced red onion. gen­tly fry for 3-4 mins.

2 add 500g of minced pork (5% fat), 2 sliced red pep­pers and 2 peeled and chopped car­rots. Break down the mince with a wooden spoon and place a lid on the pan. Leave to cook for 5-10 mins so the veg has a chance to soften.

3 now add 1tbsp honey, 1tbsp fish sauce, 2tbsp soy sauce and some lime juice and mix well. cook for a fur­ther 2-3 mins un­til the mince is com­pletely cooked through, the veg­eta­bles are soft and the sauce has re­duced.

4 Wash 1 Lit­tle gem let­tuce, chop off the ends and sep­a­rate out the leaves into 4 cups. chop 2 spring onions.

5 Fi­nally, stir in 25g of peanuts and a hand­ful of mint and co­rian­der into the pork mix­ture. Fill each let­tuce leaf with a spoon of mince and sprin­kle with some spring onions to serve.
