Deli-style tortelloni
Perk up a packet of fresh stuffed pasta with added veg and a sprinkling of cheese – ready in just 10 mins

✱✱500g packet spinach and ricotta tortelloni
✱✱290g jar roasted mixed sliced peppers in oil
✱✱Juice of ½ lemon
✱✱70g wild rocket
✱✱2tbsp freshly grated Parmesan, optional
1 bring a large pan of salted water to the boil. add the tortelloni, bring to the boil then simmer for 3 mins.
2 drain the tortelloni and return to the pan. drain the peppers, reserving 1tbsp of the oil. add the peppers, reserved oil and lemon juice to the pan and gently heat through for 1 min. season with salt and freshly ground black pepper.
3 gently mix in the rocket and grated parmesan, if using, and serve. Per serving: 373 cals, 17g fat (7g saturated), 38g carbohydrates
