FOOD ED’S TIP

To blind bake the pastry case, roll the pastry thin then use to line the tin. Chill for 30 mins. Preheat the oven to 180C/ Gas 4. Prick with a fork then line with scrunched baking parchment and baking beans. Bake for 15 mins, then remove the beans and paper. Brush with a little beaten egg and bake for another 5 mins to seal.
