Strawberry Pimm’s granita
Light, refreshing and easy to prepare the night before.
SERVES 6
READY IN 10 MINS, PLUS FREEZING
✱ 200g caster sugar
✱ ½ cucumber, cut into slices
✱ 4 mint sprigs, plus extra to garnish
✱ 400g strawberries, hulled, plus extra, to garnish
✱ 200ml Pimm’s No.1
1 Dissolve the sugar in 300ml boiling water. Add the mint and cucumber, leave to cool completely then strain away the mint and cucumber.
2 Blend the strawberries until as smooth as possible then stir in the infused syrup and Pimm’s. Strain into a rigid container and freeze overnight.
3 Break up the crystals with a strong fork and return to the freezer until ready to serve. Spoon into cocktail glasses and garnish with strawberry slices and mint leaves.
