Sweet potato roasties with garlic

Beautifull­y fluffy inside with a satisfying crunchy exterior.

SERVES 8 PREP 15 MINS COOK 45 MINS

✱ 1kg sweet potatoes, peeled

✱ Rapeseed oil, for roasting

✱ 2 garlic heads, halved horizontal­ly

✱ 6 sprigs fresh thyme

1 Chop each sweet potato into three or four pieces. Transfer to a large pan. Cover with cold water, bring to the boil and simmer for 5 mins. Drain thoroughly.

2 Heat the oven to 180C Fan/ Gas 6. Fill a roasting tray a third of the way up with oil and place in the oven to heat (5 mins). Transfer the potatoes to the hot oil. Cook for 45 mins until golden. Add the garlic 30 mins before the end of cooking and turn the potatoes every 15 mins or so.

3 Transfer potatoes and garlic to a serving bowl. Season with sea salt, black pepper. Garnish with thyme.
