Get-ahead gravy
Make this a couple of days before and reheat with the turkey.
SERVES 8 PREP 5 MINS COOK 25 MINS
✱ 600ml or 1 pouch turkey or chicken stock
✱ 300ml amontillado sherry or Madeira wine
✱ 1 bay leaf
✱ 2tsp cornflour
✱ A knob of butter to finish (optional)
1 Bubble the stock with the sherry or wine until the alcohol has burned off, then add the bay leaf.
2 Mix the cornflour with cold water and add this paste to the stock. Bubble, stirring until thickened.
3 Remove the bay leaf and chill. On the day, add to the turkey.
