Carrots with honey and clementine
These carrots look fabulous and taste great!
SERVES 8 PREP 5 MINS COOK 30 MINS
✱ 60g butter
✱ Juice 2 clementines
✱ 2 star anise
✱ 2tbsp honey
✱ 2 sprigs thyme
✱ 600g carrots, peeled, halved or quartered
1 Melt the butter in a lidded casserole. Add the clementine juice, star anise, honey and thyme.
2 Add the carrots and toss to coat evenly. Put on the lid and cook for 25 mins over a low heat, tossing a few times to avoid burning. Remove the lid and allow to cook for 5 mins. The liquid will reduce to a glaze and coat the carrots. Serve immediately sprinkled with sea salt.
