Mustardy gnocchi bake
This is great when you just want to quickly bung something in the oven and have a few minutes to yourself. Serve with salad on the side or a selection of steamed greens, if liked.
SERVES 4 PREP 2 MINS COOK 25 MINS
✱ 500g pack of gnocchi
✱ handful frozen peas
✱ 150ml double cream
✱ 1tsp wholegrain mustard
✱ handful of grated cheese (e.g. Cheddar, Red Leicester or mozzarella)
1 Heat the oven to 180C Fan/gas 6. Put the gnocchi in an ovenproof dish. Add the peas, cream and mustard.
2 Mix with a spoon until the mustard and cream are well combined. Sprinkle over the cheese, then bake for 25 minutes.
3 Remove from the oven and leave to cool slightly before serving.
4 This is an easy dish to freeze if serving fewer people – defrost portions in the fridge then reheat in the microwave for 30 secs or pop in a hot oven at 180C Fan/gas 6 for 15 mins.
