Campfire stew with baked sweet potatoes
This is a great dish for all the family and only requires the use of one saucepan so there’s minimal washing up.
SERVES 2 PREP 5 MINS COOK 30 MINS
✱ 2 sweet potatoes
✱ drizzle sunflower oil
✱ 1 rasher bacon, chopped
✱ ½ red pepper, chopped
✱ ½ x 400g tin of chopped tomatoes
✱ ½ x 400g tin of baked beans
1 Heat the oven to 180C Fan/gas 6. Bake the sweet potatoes for 30 mins (or microwave if you prefer).
2 Meanwhile, heat a drizzle of sunflower oil in a saucepan (one with lid) over a medium heat, then add the bacon and fry for a couple of mins.
3 When the bacon is starting to crisp, add the pepper and fry for 1 min, then add the tomatoes and beans. Mix well and reduce the heat to low, cover then leave it to simmer for 15 mins.
4 Slice the baked sweet potatoes in half and spoon on the campfire stew to serve.
