There’s some­thing about a rich and fra­grant tomato sauce com­bined with a perfect soft yolk that makes this dish so won­der­fully mor­eish.

You will need:

2tbsp olive oil

1 red pep­per, de­seeded and chopped

1tsp ground cumin

Pinch of ground co­rian­der

1tsp gar­lic paste or 1 gar­lic clove, crushed

5 toma­toes, chopped

4 eggs

Chopped fresh pars­ley and smoked pa­prika, to gar­nish

How to do it:

1 Heat the olive oil in a large fry­ing pan, add the red pep­per and cook for 5 mins to soften.

2 Add the ground cumin, co­rian­der, gar­lic and chopped toma­toes and cook for 10 mins, stir­ring oc­ca­sion­ally.

3 Make 4 dips in the tomato mix­ture and crack an egg into each one. Cook for 3-5 mins un­til the white has set and the yolk is cooked to your lik­ing, cov­er­ing the pan with a lid if you like a firmer yolk. Scat­ter with chopped pars­ley and dust with smoked pa­prika, to serve.
