Easy eggs with bub­ble and squeak

Who doesn’t love this Bri­tish clas­sic? It’s perfect for break­fast, lunch or din­ner!

You will need:

400g pota­toes, peeled and chopped

400g parsnips, peeled and chopped

300g greens, shred­ded

2tbsp whole­grain mus­tard

1tbsp oil

4 eggs

How to do it:

1 Bring the pota­toes and parsnips to the boil in a pan of cold water, sim­mer for 5 mins, drain and mash.

2 Mi­crowave the greens in a bowl with 2tsp water, cov­ered with cling film, for 1 min, then squeeze out ex­cess water.

3 Mix with the mash and the mus­tard, and shape into pat­ties. Heat the oil in a fry­ing pan and gen­tly cook for 5 mins on each side.

4 Mean­while, fry the eggs. Serve the pat­ties each topped with an egg.
