Mint choc chip yo­gurt ice cream Sim­mer 100ml wa­ter in a pan with 50g caster

sugar over a medium heat, stir­ring un­til the sugar dis­solves. Add a small bunch of mint (sav­ing a few leaves) and bring to the boil. Sim­mer for 2-3 mins, re­move the pan from the heat and strain the syrup into a bowl. Beat in 500g cus­tard and 250g

greek yo­gurt. Chop the ex­tra mint and mix in, along with a few drops green food colour­ing. Freeze the mix­ture, stir­ring oc­ca­sion­ally while it freezes to avoid large ice crys­tals form­ing. When start­ing to set, stir in 100g

chopped mint choco­lates. Freeze un­til firm enough to scoop.
