Mint choc chip yogurt ice cream Simmer 100ml water in a pan with 50g caster
sugar over a medium heat, stirring until the sugar dissolves. Add a small bunch of mint (saving a few leaves) and bring to the boil. Simmer for 2-3 mins, remove the pan from the heat and strain the syrup into a bowl. Beat in 500g custard and 250g
greek yogurt. Chop the extra mint and mix in, along with a few drops green food colouring. Freeze the mixture, stirring occasionally while it freezes to avoid large ice crystals forming. When starting to set, stir in 100g
chopped mint chocolates. Freeze until firm enough to scoop.
