Special fried rice

Who doesn’t love a quick egg fried rice? This simple supper is ready in minutes.

You will need:

✽ 250g Thai aromatic

or long-grain rice ✽ 3 medium eggs ✽ 2 spring onions, trimmed and finely chopped ✽ 2tbsp vegetable oil ✽ 125g raw, peeled prawns ✽ 125g cooked chicken, cut

into small cubes ✽ 60g cooked pork, ham or gammon, cut into cubes ✽ 90g frozen peas ✽ 1tbsp light soy sauce

How to do it:

1 Rinse rice in cold water before putting in a pan with 600ml water. Bring to the boil, cover, and simmer for 10 mins or until rice is just tender. Drain through a sieve and rinse with cold water. Put sieve over a bowl and use a wooden spoon handle to make about 6 holes in the rice to help it cool quickly. 2 Beat the eggs with about 1tsp chopped spring onion and a pinch of salt. 3 Heat 1tbsp of oil in a hot wok or pan, add the eggs and scramble until just set. Spoon into a bowl and set aside. Wipe the wok or pan clean with kitchen paper. 4 Heat the rest of the oil in the wok or pan, add the prawns and stir-fry for 1 min, then add the cooked meat and peas. Stir a few times over a high heat. Add the soy sauce and stir-fry for a few mins. Mix in the rice and heat through. Add the eggs with the rest of the onion and stir to separate rice grains. Serve half the dish hot and save the rest for tomorrow.
