Pilaf-stuffed peppers
Serves: 4 You will need:
✽ Leftover pilaf (half the original) ✽ 4 red peppers, halved and deseeded ✽ 250g paneer cheese, sliced into cubes ✽ Fresh chillies and coriander, to serve (optional) ✽ Mixed green salad, to serve
How to do it:
1 Preheat the oven to 180C, Gas 4. Spoon the pilaf mixture into the pepper halves and squash down a little with the back of a spoon. Sprinkle over the chopped paneer and bake for 20-25 minutes, until hot through and slightly softened. 2 Top with sliced red chillies and fresh coriander, if using, and serve with a side salad.
