Beautiful berries: fruity desserts for summer

A British fave that’s bursting with plump, juicy berries.

You will need:

✽ 175g caster sugar ✽ 1kg mixed prepared fruit (strawberri­es, blueberrie­s and raspberrie­s) ✽ 10-12 slices of white bread, medium sliced, crusts removed

How to do it:

1 Pour 6tbsp water into a pan and add the sugar. Put the pan over a medium heat and stir until the sugar dissolves. Add the fruit and simmer for 7-10 mins,

until the fruit is soft. Strain the fruit to separate the juice. 2 Cut a round of bread to fit the base of a 1.5ltr basin. Dip one side in the juice and put in the basin, dipped-side down. Reserve 4 slices to cover the top. Cut the rest of the slices of bread into 3 strips. Dip each strip in the juice and put against the sides of the basin, slightly overlappin­g them. Spoon the fruit into the basin; press 3 down well. Pour most of the remaining juice over, cover with the reserved bread and trim any excess. Brush the bread with juice. 4 Put the basin in a shallow bowl to catch any leaking juices, cover the pudding with clingfilm and put a plate on top, then weigh this down with tins of food, eg, tomatoes or baked beans. Chill overnight. 5 To serve, remove the tins, plate and clingfilm. Put a plate, with a rim to catch any juices, on top of the pudding, invert the plate and shake hard to release the pudding. Serve with clotted cream.
