Peach and vanilla tarte tatin

We love this take on a classic dessert, and it’s easier to pull together than you would imagine!

You will need:

✽ 300g puff pastry ✽ 6 peaches, halved and stoned ✽ 75g butter ✽ 75g caster sugar ✽ 1 vanilla pod, halved and seeds

scraped out ✽ Vanilla ice cream, to serve

How to do it:

1 preheat the oven to 200C/gas 6. Roll out the pastry on a lightly floured surface to the thickness of a £1 coin and cut out a 26cm circle. put on a baking tray and chill in the fridge.

2 slice the peaches 1cm thick, then set aside. melt the butter in a 23cm ovenproof frying pan, then add the sugar, vanilla pod and seeds. don’t overstir, just leave it to melt over a medium/low heat until the sugar dissolves. don’t panic if it splits – it will come together in the oven.

3 once it looks like a light caramel, take the pan off the heat and arrange the peach slices in a spiral pattern in the caramel. Cover with the pastry circle and gently tuck the edges down into the pan. bake for 30 mins until golden, puffed up and bubbling at the edges.

4 leave to cool for 5 mins. Using a palette knife, loosen the pastry from the edge of the pan. put a serving plate over the top of the pastry and carefully flip the pan over to turn out the tart. serve with ice cream.
