Rustic plum pie
Serves: 6
This is a delicious pie recipe designed to make the most of seasonal fruits while they’re at their best.
You will need:
✽ 200g plain flour,
plus extra to dust ✽ 125g chilled unsalted butter, cubed ✽ 1 medium egg, beaten ✽ 100g golden caster sugar ✽ 600g plums, halved, stones removed
and cut into chunky slices ✽ Finely grated zest of 1 lemon,
plus 1tbsp lemon juice ✽ 2tbsp white breadcrumbs ✽ 3tbsp plum jam, warmed
How to do it:
1 to make the pastry, put the flour and butter into a food processor and whizz until mixture resembles breadcrumbs. add the egg and 2tbsp sugar, then whizz again until it just forms a ball. Wrap in clingfilm and chill for 30 mins. 2 heat the oven to 200C/gas 6. mix the plums in a bowl with all but 2tsp of the remaining sugar, plus the lemon zest and juice. 3 Using a floured rolling pin, roll out the pastry on a large sheet of floured baking paper to a circle about 30cm across. lift the pastry and paper onto a baking tray. 4 sprinkle the centre of the pastry with the breadcrumbs. pile the plums in the centre of the pastry, leaving a wide border. Fold the pastry edges up and over the fruit. sprinkle with the remaining sugar. bake for 35-40 mins, until the pastry is golden and the fruit is tender. brush with warm jam to serve.
