Cit­rus roast turkey

(or 8 for din­ner with enough for leftovers)

Sea­soned with lemon, or­ange and herbs, and cooked en­closed in but­tery foil to seal in the flavour, this turkey tastes sim­ply fan­tas­tic.

You will need:

✽ 6.3kg turkey

✽ 2 red onions, cut into wedges

✽ 1 lemon, cut into wedges

✽ 1 or­ange, cut into wedges

✽ Few sprigs thyme, sage and pars­ley

✽ 75g but­ter

How to do it:

1 tuck the onion, lemon and or­ange wedges and some of the herbs into the turkey cav­ity.

2 Line a large roast­ing tin with 2 large pieces of foil. Sit the turkey on the foil, sea­son gen­er­ously, dot with the but­ter and wrap tightly in the foil. (You can leave the turkey in the fridge overnight at this stage.) cal­cu­late cook­ing time – roast for 15 mins for each 450g plus 15 mins.

3 heat oven to 200c/gas 6. Roast ac­cord­ing to weight – for this size of turkey it’s 3 hours 45 mins. Un­wrap foil for the fi­nal 30 mins of cook­ing time.

4 Leave the turkey to rest out of the oven, wrapped in foil, for at least 30 mins – though up to 1 hour is fine if you need the oven space.
