Red cab­bage & ap­ples

this com­bi­na­tion ac­tu­ally im­proves if it’s made in ad­vance, so feel free to com­pletely cook ahead and sim­ply re­heat on Christ­mas Day.

You will need:

✽ 750g red cab­bage, shred­ded

✽ 2 red onions, chopped

✽ 2tbsp light mus­co­v­ado sugar

✽ 1tsp cin­na­mon

✽ 2tbsp bal­samic vine­gar

✽ Pars­ley, to gar­nish

How to do it:

1 Place all of the red cab­bage in­gre­di­ents to­gether in a large pan and add a splash of wa­ter. Sea­son the in­gre­di­ents well and cover the pan, then sim­mer for 40 mins un­til ev­ery­thing is ten­der. Gar­nish with pars­ley be­fore serv­ing.
