CHILLI PRAWN PASTA

We love chillies and there is something wonderful about the combo of chilli, prawns and pasta. This is so simple to make but tastes the business. The trick with pasta when you’re dieting is to weigh it beforehand and stick to a small amount. It’s all too easy to cook – and eat – too much.

You will need

✽ 200g linguine ✽ 1tbsp olive oil ✽ 3 garlic cloves, crushed ✽ 2 medium red chillies, deseeded

and finely chopped ✽ Zest and juice of half a lemon ✽ 500g raw prawns, shelled ✽ Small bunch of parsley, finely chopped

How to do it

1 Bring a large saucepan of water to the boil. Season with a good pinch of salt and add the pasta. 2 Meanwhile, heat 1tbsp of olive oil in a large frying pan. Add the garlic and chillies and cook them over a medium to low heat until you can smell their aroma. Don’t let the garlic take on any colour. Add the lemon zest and the prawns. Season with plenty of salt and pepper and cook the prawns for 1-2 mins on each side. 3 Drain the pasta, reserving a ladleful of the cooking water. Add 3-4tbsp of the cooking water to the prawns plus the lemon juice, and simmer for a couple of minutes. Add the linguine to the pan and toss everything together. 4 Stir in the parsley and serve at once with a crisp green salad on the side.
