DINNER FOR ONE

Puttanesca orzo
SERVES 1
This flavour- packed meal is better than a takeaway and can be on your table in just 20 minutes.
YOU WILL NEED
1tbsp olive oil
2 garlic cloves, finely chopped 2 anchovy fillets, drained
1tsp tomato puree
200g finely chopped tomatoes 50g pitted black olives ½tbsp capers
Pinch chilli flakes, optional
75g orzo (a tiny pasta shape) Small handful fresh basil, chopped Parmesan, to serve
HOW TO DO IT

Heat the oil in a small non-stick frying pan. Add the garlic and cook for around 2 mins, until soft and golden but not deep brown. Add the anchovy fillets and tomato puree, and cook for 1 min to dissolve together.

Add the chopped tomatoes, olives, capers and chilli flakes, if using. Simmer on a low heat for 10 mins.

Meanwhile, bring a pan of water to the boil and cook the orzo according to the pack instructions.

Drain the orzo and mix into the sauce. Garnish with fresh basil and the Parmesan shavings.

TIP YOU CAN SERVE THIS WITH REGULAR PASTA OR COOK THE SAUCE DOWN A LITTLE MORE AND USE IT AS A PIZZA TOPPING
