Salmon Alfredo pasta

This simple pasta dish is one you’ll keep coming back to.

YOU WILL NEED

75g fettuccine

5g butter

30g reduced-fat mascarpone 1tsp grated Parmesan

60g hot-smoked salmon, flaked Zest of ½ a lemon

HOW TO DO IT

Bring a pan of salted water to the boil. Add the pasta and cook according to the pack instructio­ns.

Put 1tbsp of the cooking water into a bowl. Add the butter and mix until melted. Stir in the mascarpone and Parmesan, then the salmon and cooked pasta. Toss together, adding more of the cooking water to make a sauce.

Put into a bowl, add the lemon zest and sprinkle with cracked black pepper, if liked.

TIP TRY SWAPPING THE SALMON FOR PRAWNS IF YOU PREFER
