Basil and goat’s cheese tartlets
MAKES 12
You don’t even need a rolling pin to make these super-quick but impressive tartlets.
YOU WILL NEED
320g sheet of ready-rolled puff pastry Beaten 1 egg, beaten
2-3tbsp basil pesto
120g log of goat’s cheese, sliced into 12 3-4 tomatoes, thinly sliced 1-2tbsp basil leaves, shredded Olive oil, for drizzling
HOW TO DO IT

Heat the oven to 220°C/gas 7. Unroll the puff pastry and trim along the edges. Brush with the beaten egg, then cut into 12 squares. Place the squares on a baking sheet and spoon a little pesto onto each one.

Top each tartlet with a slice of goat’s cheese and 1-2 slices of tomato. Scatter over the shredded basil leaves and add a little more pesto.

Drizzle over a little olive oil and bake for 15-20 mins until the tartlets have puffed up and golden. Serve warm.
TIP USE MOZZARELLA INSTEAD OF GOAT’S CHEESE IF YOU WANT TO ADD THINLY SLICED CHORIZO OR TORN PARMA HAM
