Breakfast hash

SERVES 2

Gently-fried potatoes, smoky bacon and a gooey egg – this winning combinatio­n is the perfect way to start your day.

YOU WILL NEED

350g potatoes, diced

2tbsp oil

1 onion (approx 180g), diced

4 rashers smoked back bacon, chopped 2 tomatoes (approx 180g), roughly chopped

2 medium eggs

2tbsp flat-leaf parsley, roughly chopped

HOW TO DO IT

Cook the potatoes in boiling water for 5 mins; drain. 2

Heat the oil in a large frying pan and fry the potatoes, onion and bacon for 5-6 mins until browned. Add in the tomatoes and cook for a further 2-3 mins until softened, season and stir in half the parsley.

Meanwhile, poach the eggs in simmering water for 3-4 mins; drain.

Serve the breakfast hash topped with the poached eggs and sprinkle over the remaining parsley to serve.

TIP REPLACE THE BACON WITH SLICED MUSHROOMS AND LEAVE OUT THE EGG FOR A VEGAN ALTERNATIV­E.
