Build-your-own veggie rice bowl
SERVES 2
Serve all the components in individual dishes at the table so everyone can help themselves to a bit of whatever they fancy to build their rice bowls.
YOU WILL NEED
4tbsp gochujang paste
4tbsp light soy sauce
320g cooked jasmine rice (we used a cooked rice pouch)
10 radishes, thinly sliced
160g pan-fried tofu, cooked chicken or cooked prawns
A few slices of cucumber
100g broccoli florets, blanched A few pinches chilli flakes
A few pinches sesame seeds 2tbsp kimchi or other pickled vegetables
HOW TO DO IT

In a small saucepan, heat the gochujang paste with 4tbsp water and the light soy sauce over a mediumhigh heat, mixing well until it forms a runny sauce.

To assemble your rice bowl, first spoon some cooked jasmine rice into the bottom, then arrange slices of radish, tofu (or chicken or prawns), cucumber slices and a few broccoli florets on top.

Sprinkle over the chilli flakes and sesame seeds. Serve with a dollop of the gochujang sauce and the kimchi.
