Birthday cake cookies
MAKES 8-10 These fun cookies reflect all the colours, balloons and food you get at a birthday party.
YOU WILL NEED
115g unsalted butter, at room temperature 100g soft light brown sugar
100g white granulated sugar
1 medium egg
1tsp vanilla extract
300g plain flour
½tsp bicarbonate of soda
½tsp sea salt
250g white chocolate chips
75g ‘funfetti’ sprinkles
For the filling:
75g unsalted butter, at room temperature 150g icing sugar
Food colouring (we used pink)
HOW TO DO IT

In a large bowl, using an electric mixer cream the butter and both sugars together until smooth. Add the egg and vanilla and beat again. Add the flour, bicarbonate of soda and sea salt. Beat until a dough is formed. Add the chocolate chips and sprinkles then mix until well distributed.

Portion the dough into 16-18 balls (approx 50-60g each). Lay the balls on a flat tray that fits in the freezer then freeze for at least 30 mins, or chill in the fridge for 1 hr.

Meanwhile, heat the oven to 180C/fan 160C, and line three baking trays with baking paper. Remove the balls of dough from the freezer and arrange them on the lined baking trays, about five or six to each. Bake for 10-11 mins, then cool on the trays while you make the filling.

In a large bowl, beat the butter for a few mins to loosen it. Add the icing sugar and beat until smooth. Add a few drops of food colouring (we used pink, but you can use any of your choice) and beat well.

Transfer the filling to a piping bag with a nozzle and pipe over half the cookies. Top with the remaining cookies and sandwich the halves together.
TIP IF YOU WANT TO MAKE A CHOCOLATE COOKIE DOUGH, YOU CAN REMOVE 50G PLAIN FLOUR FROM THE RECIPE AND ADD 35G COCOA POWDER INSTEAD.
