CHOOSE ONE, ALL SERVE ONE
Coffee and banana overnight oats
Mix together 40g plain porridge oats, 2tsp instant coffee powder, 1 level tsp sweetener (optional), ½tsp vanilla extract, 100g fat-free natural yogurt and 100ml water. Put in a lidded container and chill overnight. The next day, stir the mixture and loosen with a splash of water, if you like. Top with sliced bananas and pomegranate seeds.
Fruit salad
Chop a selection of your favourite fresh fruit (such as mixed berries, apple chunks, melon and grapes) and mix together with some fat-free natural fromage frais and 1 level tsp sweetener, to serve. Top with fresh mint leaves, if you like.
Weetabix and fruit
Top 2 wholewheat cereal biscuits with milk (from your daily allowances) and add a selection of your favourite fresh fruit.
Mushroom omelette
In a pan sprayed with low-calorie cooking spray, fry some sliced mushrooms with a little chopped fresh parsley and a few tbsp of plain quark.
Spray another pan with low-calorie cooking spray and fry 2-3 beaten eggs to make an omelette. When beginning to set, spoon in the mushroom mixture and fold the omelette in half. Serve with grilled vine tomatoes.
