Creamy seafood pasta

This simple dish is cooked from freezer staples and is on the table in the time it takes the pasta to cook.

YOU WILL NEED

180g tagliatell­e or spaghetti 1tbsp olive oil

2 garlic cloves or 1 shallot 200g frozen seafood (we used a fish pie mix)

4tbsp half-fat creme fraiche Zest and juice 1 lemon 2tbsp freshly chopped chives (optional)

HOW TO DO IT

1 In a large pan of boiling, salted water, cook the pasta according to the pack instructio­ns. Drain but reserve a cup of the pasta water.

2 Warm the oil and garlic/shallot in a deep frying pan, stir in the seafood and fry over a medium heat until defrosted and almost cooked through, around 5-8 mins.

3 Add the creme fraiche, lemon zest and juice, and a little pasta cooking water to make a smooth sauce. Toss in the pasta to coat, then serve scattered with chives, if using.

TIP ADD A SPLASH OF WHITE WINE OR SHERRY IN STEP 2 IF YOU’VE GOT SOME OPEN.
