Creamy seafood pasta
SERVES 2
This simple dish is cooked from freezer staples and is on the table in the time it takes the pasta to cook.
YOU WILL NEED
180g tagliatelle or spaghetti 1tbsp olive oil
2 garlic cloves or 1 shallot 200g frozen seafood (we used a fish pie mix)
4tbsp half-fat creme fraiche Zest and juice 1 lemon 2tbsp freshly chopped chives (optional)
HOW TO DO IT
1 In a large pan of boiling, salted water, cook the pasta according to the pack instructions. Drain but reserve a cup of the pasta water.
2 Warm the oil and garlic/shallot in a deep frying pan, stir in the seafood and fry over a medium heat until defrosted and almost cooked through, around 5-8 mins.
3 Add the creme fraiche, lemon zest and juice, and a little pasta cooking water to make a smooth sauce. Toss in the pasta to coat, then serve scattered with chives, if using.
TIP ADD A SPLASH OF WHITE WINE OR SHERRY IN STEP 2 IF YOU’VE GOT SOME OPEN.
