Croissant pizzas

MAKES 4

I love to make this totally delicious pizza-style snack for the kids.

YOU WILL NEED

2 croissants, cut in half horizontal­ly 100g mozzarella block, shredded A few slices of pepperoni

A few basil leaves

1tbsp olive oil

For the sauce:

4tbsp tomato puree

1tbsp olive oil

1 medium tomato, finely chopped 1tsp dried oregano or mixed Italian herbs

1 small garlic clove, crushed

A few basil leaves, finely chopped Pinch caster sugar (optional)

Heat the oven to 180C Fan/gas 6. Make the sauce by mixing all the ingredient­s together and seasoning with salt and pepper. Add a pinch of sugar too if you like, but the basil acts as a good sweetener.

Divide the sauce between the croissant halves spreading right up to the edges. Top with the cheese and pepperoni. Tear up the basil leaves and scatter over, then drizzle with oil.

Bake for 10 mins until the cheese has melted and everything has started to brown. Serve straight away.

TIP SWAP THE PEPPERONI SLICES FOR HAM OR CHORIZO IF YOU LIKE. OR SWITCH THE RED MEAT FOR SLICED MUSHROOMS OR TINNED TUNA.
