White wine gravy
Make this proper gravy well ahead for one less job on the big day.
YOU WILL NEED
400g chicken wings
1 onion, roughly chopped
1 carrot, roughly chopped
1 stick of celery, roughly chopped 1 bouquet garni
1ltr chicken stock
200ml white wine
1tbsp cornflour
HOW TO DO IT

In a saucepan, fry the chicken wings until golden. Add the onion, carrot, celery, bouquet garni, stock and wine. Simmer for 1 hr 30 mins.

Remove the scum from the surface, then strain. Mix together the cornflour with 2tbsp water and stir into the strained liquid. Cook for 20 mins until thickened, season to taste. Cool, then cover and chill until ready to serve - up to 4 days ahead.

On Christmas day add the turkey resting juices and reheat.
