Making the aubergine and onion bhaji bake on p35? Use up the Madras curry paste to make these tasty treats.

ADD a tsp to houmous, then serve with pitta, carrot sticks or mini poppadums. MIX with yogurt and a grated clove of garlic and use to marinade prawns or chicken. Cook under a hot grill, then serve with salad or rice.

SPREAD in a sandwich with mayo, then pile in shredded cooked chicken and iceberg lettuce for a twist on coronation chicken.

TIP FREEZE CURRY PASTE PORTIONS IN AN ICE CUBE TRAY. TRANSFER TO A FREEZER BAG, THEN DEFROST WHEN NEEDED.
