Try these alcohol-infused glazes instead. Follow the instructio­ns below then brush liberally over the ham as above in step 3.

✣ SPICED GINGERBREA­D RUM

Combine 4tbsp marmalade, 2tbsp spiced rum, ¼tsp allspice, 1tsp ground ginger and ½tsp mixed spice.

✣ CRANBERRY AND PORT

Simmer 100ml port, 150g cranberrie­s and 2tbsp light brown sugar in a small saucepan until the sugar is dissolved and the mixture thickens. Cool slightly before using.

✣ WHISKY, MUSTARD AND MAPLE Make a paste from 57g English mustard powder, 4tbsp maple syrup and 3tbsp whisky.
