Beef Rogan Josh With Aromatic Pilaf

FOR THE BEEF ROGAN JOSH:

Serves 8 Calories: 270 per serving Fat: 10g

Saturated fat: 3g Carbohydra­tes: 17g

4tbsp vegetable oil

900g (1lb 14oz) stewing beef, cut into 3cm (1¼in) cubes 2 large onions, finely sliced 5cm (2in) piece root ginger, peeled and grated

3 garlic cloves, chopped

1tsp garam masala

½ x 283g jar Patak’s rogan Josh Spice Paste

1tbsp tomato purée

¾ltr (1¼pt) hot beef stock 450g (1lb) sweet potato, cut into 2cm (¾in) cubes Small bunch of fresh coriander, chopped, optional 1 red onion, finely sliced for garnish, optional

1 Heat 1tbsp oil in a large pan and fry the beef in batches using 3tbsp oil, in total, until golden. Take out and set aside.

2 Add 1tbsp oil and onion and fry gently for 5 mins, until slightly browned. Add the grated ginger, garlic, garam masala, curry paste and tomato purée. Fry for 1 min.

3 Return the browned beef to the pan, add the stock, season and simmer for 1 hr.

4 Stir in the sweet potato and

cook for 30 mins. Add more stock if needed. Cool and chill if preparing ahead. Warm through in the oven for 30 mins. Add coriander and onion, if you like.

FOR THE AROMATIC PILAF:

Serves 8 Calories: 200 per serving Fat: 1.5g

Saturated fat: 0.5g Carbohydra­tes: 41g

400g (14oz) basmati rice 1tbsp oil

1 onion, sliced

1 garlic clove, crushed 4 cloves

½ a stick of cinnamon 4 cardamom pods, crushed 2tbsp black mustard seeds 900ml (1½pt) vegetable stock

1 Soak rice. Heat the oil and fry the onion for 5 mins. Add garlic, cloves, cinnamon stick, cardamom pods, mustard seeds and ½tsp salt and fry for 1 min.

2 Drain rice and stir into the stock. Bring to boil, reduce the heat to low and cover. Cook for 10-12 mins to absorb water.

3 Remove the pan from the heat and lift the lid. Cover with a tea towel and put lid on properly for 5 mins, to absorb moisture. Alternativ­ely, cook and transport it in a rice cooker.
