An important source of healthy monounsatu­rated and polyunsatu­rated fats, they’re also a great source of vitamin E and, for some oil varieties, polyphenol­s, as in extra-virgin olive oil, and alpha-linolenic acid, a plant-based omega-3

fatty acid in walnut and flaxseed oil. Vitamin E and omega-3 fatty acids are directly linked to brain health and a lower risk of dementia in scientific studies. I suggest making extra-virgin olive oil your primary oil, and using two tablespoon­s a day.
