MINI DUTCH BABIES WITH FRESH BERRIES
The Dutch baby is an impressive dish, like a sweet version of a Yorkshire pudding. The filling is very versatile, so play away!
SERVES 6
For the pancakes:
✣ 100g (3½oz) plain flour
✣ Pinch of salt
✣ 2tbsp caster sugar
✣ 100ml (3½fl oz) milk
✣ 3 eggs
✣ 1tsp vanilla extract
✣ 3tsp butter
To serve:
✣ 300g (10oz) thick plain yogurt
✣ 300g (10oz) berries (we used blueberries and raspberries)
✣ Maple syrup

Heat the oven to 220C/ Gas 7. Put the flour, salt and caster sugar in a large bowl. Whisk in the milk, 60ml (2fl oz) water, and the eggs and vanilla extract.

Put individual Yorkshire pudding tins (measuring 10cm/4in) in the oven for 2 mins to heat up. Add ½tsp butter into each hole. Divide the batter between the tins and bake for 15 mins until golden and cooked through.

To serve, top with spoonfuls of yogurt and berries, and drizzle over a little maple syrup.
