SALMON, ASPARAGUS AND PEA FRITTATAS

Frittatas are a great way to pack a lot of veg and protein into a meal.

SERVES 4

✣ 2 eggs plus 2 extra egg whites

✣ 60g (2oz) smoked salmon, chopped

✣ 60g (2oz) asparagus tips, halved lengthways

✣ 30g (1oz) frozen peas

✣ 3tbsp chopped fresh dill

✣ Spray oil, eg Frylight

✣ Watercress, to serve

Heat the oven to 180C/Gas 4. Beat together the whole eggs and egg whites, then stir in the salmon, asparagus, peas and dill. Season well with salt and pepper. 2

Line a muffin tin with 4 muffin cases and spritz each one with 2 sprays of oil. Divide the mixture between them and bake for 15-20 mins, or until set.

Allow to cool for a couple of mins in the tins, then remove and serve hot or cold with watercress.
