BURGER IN A BOWL
READY IN 20 MINUTES
✣ Low-calorie cooking spray
✣ 500g lean beef mince (5% fat or less)
✣ 1 large onion, finely chopped
✣ 2 garlic cloves, crushed
✣ ½ iceberg lettuce, roughly shredded
✣ 8 gherkins, sliced
✣ 1 small red onion, finely chopped
✣ 2 tomatoes, finely chopped
For the super sauce
✣ 3 level tbsp extra-light mayonnaise
✣ 5tbsp plain quark
✣ 1 level tbsp American-style mustard
✣ 2tbsp tomato purée
✣ 2tsp white wine vinegar
✣ ½tsp garlic salt
✣ ¼tsp onion granules
✣ ¼tsp sweet smoked paprika

Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the beef, onion and garlic and cook for 6-7 mins or until the beef is cooked through and the onions have softened, breaking up any lumps with a spoon. Drain off any fat in the pan and season lightly.

Meanwhile, put all the super sauce ingredients in a bowl, add 4tbsp water and whisk until combined.

Mix the lettuce, gherkins, red onion and tomatoes and divide between 4 wide bowls. Spoon the beef mixture into the middle, evenly drizzle over the super sauce and serve straight away.
TIP For a vegetarian alternative, swap the beef for 500g Quorn mince.
