BLUEBERRY AND ORANGE TRIFLE

The perfect cheat’s pud you can make in just 15 minutes!

TIP Replace the Grand Marnier or Cointreau with extra orange juice if you don’t want to include alcohol.

SERVES 6

✣ 4 blueberry muffins, sliced

✣ 2 oranges

✣ 3-4tbsp Grand Marnier or Cointreau

✣ 200g (7oz) blueberrie­s

✣ 500g pot fresh vanilla custard

✣ 300ml (½pt) whipping cream

You will need:

✣ Glass trifle bowl

Arrange the muffins evenly in the base of the bowl. 2

Finely grate the zest of 1 orange and cut the zest of the other orange into fine strips. Peel and segment both oranges, catching any juice, then squeeze the membranes to extract any more juice before you discard them.

Mix the orange juice with the Grand Marnier or Cointreau, and spoon it over the muffins. Scatter over most of the blueberrie­s and all the orange segments. Mix the grated zest into the custard; pour it over the fruit and muffins. 4

Whip the cream until it forms soft peaks, then spoon it on top of the custard. Scatter over the remaining blueberrie­s and the strips of orange zest. Chill the trifle until ready to serve.
