Combining omega-3-packed salmon and beetroot, which is naturally high in nitrates, known to boost endurance, this light bite serves a double whammy
¼ green apple, cut into matchsticks • juice of ½ lemon • 1 tsp butter • 1 slice of sourdough bread •1 golden beetroot, sliced • 125g smoked salmon •2 tbsp pickled beetroot •¼ shallot, finely chopped • 1 tsp capers • 1 tsp finely chopped dill • 3 tbsp rapeseed oil • 1½ tbsp balsamic vinegar • 1 tsp wholegrain mustard • salt and pepper • handful of watercress (optional)
1. Pop the apple matchsticks in a bowl with the lemon juice to soak while you butter the bread. Arrange the golden beetroot slices on the bread, then pile the smoked salmon on top.
2. Add the pickled beetroot, along with the chopped shallot, capers and dill.
3. Make a vinaigrette with the oil, balsamic vinegar, mustard, salt and pepper. Give it a whisk and drizzle it over the beetroot, then pop the apple matchsticks on top and garnish with watercress if using. Season to taste. Beet that, baby.
