Guacamole

INGREDIENT­S 2 ripe avocados • 1 spring onion •

3 cherry tomatoes • juice of ½ a lime • 2 garlic cloves, chopped • ½ tsp black pepper

METHOD Dice the avocado, place in a mixing bowl and mash with a fork, leaving a few chunks. Slice the spring onion, then dice the tomatoes into tiny cubes and add to the bowl. Squeeze in the lime juice, then add the garlic and black pepper. Mix together and leave to chill in the fridge for 30 mins before serving.
