SPROUTS ’N’ CHEESE

INGREDIENTS
450g Brussels sprouts • 180g cashews, soaked and drained • 1 garlic clove • juice of ½ lemon • nutmeg, grated, to taste • 1 tbsp nutritional yeast
METHOD
1. Preheat the oven to 180°C. Steam the sprouts for 3 mins, then drain and place in an ovenproof dish.
2. Blitz the rest of the ingredients with 400ml water until creamy, then pour the mixture over the sprouts.
3. Bake for 25-30 mins, then grill for a few mins for a nice crispy top.
