SPROUTS ’N’ CHEESE

INGREDIENT­S

450g Brussels sprouts • 180g cashews, soaked and drained • 1 garlic clove • juice of ½ lemon • nutmeg, grated, to taste • 1 tbsp nutritiona­l yeast

METHOD

1. Preheat the oven to 180°C. Steam the sprouts for 3 mins, then drain and place in an ovenproof dish.

2. Blitz the rest of the ingredient­s with 400ml water until creamy, then pour the mixture over the sprouts.

3. Bake for 25-30 mins, then grill for a few mins for a nice crispy top.
