FLAX CRACKERS WITH HONEY AND FIGS

Serves 4-6

For the crackers: 25g flax seeds • 50g ground flax • 40g chia seeds • 250ml water • ½ tsp garlic powder • 1 tsp onion powder • 1 tbsp tamari or soy sauce • pinch of salt For the topping: 6 figs, halved • 50g honey • 2 sprigs of thyme, leaves picked

1. Preheat the oven to 100°C. Mix the cracker ingredient­s in a bowl and set aside for 15 mins to let it thicken.

2. Spread the mixture on to a roasting tray lined with baking paper and press it down using the back of a spoon. Bake for 90 mins until crisp – keep an eye on it though, as ovens vary. When it’s ready, turn off the heat and let it cool down inside.

3. Now it’s time to channel your inner Blue

Peter presenter. Grab a knife – or a cutter in the shape of a Christmas tree if you’re feeling festive AF – and cut the crackers into shape. Top each one with half a fig, a drizzle of honey and a few thyme leaves. You’re a natural at this.
