MULLED WHITE WINE

INGREDIENTS
3 cloves • peel of 1 small lemon • 5cm fresh ginger • ½ vanilla pod, halved lengthways with seeds scraped out • 750ml dry white wine • 250ml vodka • 125ml pear ginger honey syrup • handful of pomegranate seeds, to garnish
METHOD
1. Stick the cloves into 2 or 3 strips of the lemon peel as if they were pins. Add the ginger, vanilla (pod and seeds) and two thirds of the lemon peel strips (including the clove-studded ones) to a saucepan over a medium heat.
2. Stir occasionally for 5 mins, then add the wine, cover partially and simmer until the wine is infused (at least an hour). Don’t let it boil. Strain the mixture, then add the vodka and syrup. Serve in a wine glass with lemon twists and pomegranate seeds.
